Pin boxes with higher weight capacities generally are more expensive so the idea with offering a lower capacity option is to save some money while still offering a fit that will work great. Since the trailer brake assemblies you bought and installed part # AKEBRK-7-SA are self-adjusting what you'll need to do is just drive on them for a while and they'll tension themselves to the correct amount so that you don't need so much brake controller gain/voltage.

The issue you are having with the trailer nose sitting higher and no further adjustments can be made to the pin box or hitch is pretty common nowadays since trucks continue to get taller and taller.
